Los Gatos welcomes Petals Creamery, a new creamery, bakery, and café blending inventive ice cream flavors with Persian-inspired desserts. Founded by longtime friends Marcel Khorsand and Nathan Gaudreau, the shop opened May 17, offering a fresh take on classic and exotic tastes in a cozy, Parisian-style setting.
Khorsand, a Los Gatos native who transitioned from tech to culinary arts after studying in France, brings a passion for floral ingredients and cultural fusion to his creations. His imaginative ice cream lineup includes standout flavors such as rose yuzu lemonade with house-made yuzu molasses, biscotti almond torte featuring toasted almonds and imported Italian anise biscotti, and traditional chocolate enriched with cardamom and crunchy cocoa nibs. Mint chip is reimagined with handmade pistachio butter and slivered pistachios.
Co-owner Gaudreau, half Persian and a Saratoga High graduate, recalls their shared dream to open a dessert shop. The pair pursued their passion and seized a prime location to launch their creamery. Their goal: to create a welcoming space where guests feel like honored visitors, reflecting Persian hospitality traditions with abundant tea and treats.
Petals Creamery’s menu showcases twelve ice cream flavors blending Persian influences—such as the saffron and rosewater akbar mashti—with innovative options like the orange blossom creamsicle and London fog, inspired by Earl Grey tea. Unique serving options include ice cream sandwiches on tahdig (crispy rice cakes) and phyllo bowls, complemented by toppings such as chocolate sauce made with nonalcoholic Guinness beer, saffron brittle (sohan), toasted Marcona almonds, and bee pollen sourced from Carmel-by-the-Sea.
Beyond ice cream, Petals Creamery offers a rich variety of Persian and fusion desserts including sholehzard (saffron rice pudding), baklava cannoli, saffron tarts, and pistachio cupcakes made with handmade pistachio butter. The dessert highlights include a saffron crème brûlée and cookie noir, a soft chocolate cookie with white chocolate chips.
The café also features a drinks menu ranging from traditional Turkish coffee and Persian tea to affogatos and creative beverages like a carrot float—a refreshing blend of carrot juice and saffron ice cream, delighting customers familiar with Persian flavors.
Looking ahead, Petals Creamery plans to expand with artisan sandwiches inspired by Middle Eastern and European cuisines, encouraging patrons to linger over food and conversation in a relaxed, European-inspired atmosphere.
Khorsand and Gaudreau emphasize that Petals Creamery is about more than just dessert—it’s about spreading joy and community, making it a standout in the latest ice cream franchise opportunities in the region.
