Portland’s popular plant-based and gluten-free ice cream shop, Kate’s Ice Cream, has introduced a limited-edition flavor inspired by Vincent van Gogh’s iconic painting, Starry Night. The new creation is available now through February 2 at both of the shop’s locations in the city.
A Flavorful Tribute to Van Gogh
The “Starry Night” flavor blends a white maple cinnamon ice cream base with vibrant blue vanilla “brush strokes,” golden honeycomb “stars,” and a “swirly sky” chocolate syrup drizzle. The flavor was designed by Kate’s founder and recipe curator, Katelyn Williams, to complement the Beyond Van Gogh and Beyond Monet: The Immersive Experiences, currently on display at the Oregon Convention Center (OCC).
“I’ve always been a fan of van Gogh,” Williams shared. “The immersive experiences at the OCC are so captivating, and I wanted to create a flavor that gives Portlanders a joyful, colorful experience, much like the exhibits themselves.”

The exclusive flavor can be found at Kate’s Ice Cream locations on 3713 N Mississippi Avenue and 1430 NW 23rd Avenue. Visitors are encouraged to enjoy this special treat while exploring the immersive exhibits, which are open through February 2.
Immersive Art Experiences at the OCC
The Beyond Van Gogh and Beyond Monet exhibits, currently running at the OCC, offer a unique opportunity to step inside the worlds of these legendary artists. Beyond Van Gogh features hundreds of the artist’s iconic works projected onto walls, while Beyond Monet provides a fresh perspective on Claude Monet’s impressionist masterpieces.
“We encourage Portlanders to experience these inspiring shows while they’re here, and we look forward to welcoming art lovers for a scoop of ‘Starry Night’ to complete their experience,” Williams said.
Tickets for both immersive exhibitions are available now, with individual and combined showtime options through February 2.
