May 15, 2025 — Back by popular demand, Nightingale Ice Cream Sandwich have returned to Costco, and customers are racing to stock up before they disappear again. Following last spring’s sellout success of the Cookie Monster flavor, the artisanal brand has launched an exclusive new offering: an 18-pack of Strawberry Shortcake ice cream sandwiches, available only at select Costco locations.
But there’s a catch—the seasonal treat is only available at over 132 Costco stores along the East Coast, leaving fans in other regions eagerly clamoring for wider distribution.
Nightingale, known for its gourmet, clean-label approach, uses 14% butterfat ice cream and freshly baked cookies, with a promise of nut-free, non-GMO, and all-natural ingredients. The Richmond, Virginia-based company has gained a devoted following for its handcrafted treats, and the new flavor is already generating buzz.
Social media erupted with excitement when the launch was announced. “For this reason, I’m getting a Costco card,” wrote one Instagram user. Others flooded the comments with pleas for the sandwiches to be made available nationwide. “On behalf of the South Central region, I’d like to request this delicacy,” one user wrote.
Strawberry shortcake is a seasonal classic, and this frozen twist is striking a nostalgic chord with shoppers. If early reactions are any indication, the shelves may not stay stocked for long—Costco members are already loading up their carts.
