The heat is rising, and so is demand for one of the summer’s most buzzed-about frozen treats. Costco has officially brought back its wildly popular Nightingale Ice Cream Sandwiches—this time in a new seasonal flavor that’s causing a frenzy among fans.
First introduced last year, the indulgent mini sandwiches vanished from shelves within days. Now, the latest ice cream variety, Strawberry Shortcake, is making its highly anticipated comeback—but only at select Northeast Costco locations.
Crafted with rich strawberry ice cream and nestled between two soft brown sugar cookies, the mini sandwiches are sold in packs of 18 and are exclusive to the warehouse retailer. The chomp-sized portions make them an ideal summer snack, especially for those seeking indulgence without overdoing it.
While Nightingale Ice Cream Sandwiches are typically found in boutique shops or sold individually, Costco’s exclusive multi-pack format offers a value rarely seen in the premium ice cream category. And it’s driving serious foot traffic. Social media is already abuzz with East Coast customers racing to snag a box, with many calling the product a must-have. One Instagram user exclaimed, “The best!!!!” while another added, “Headed there right now!!!”
However, availability remains limited. Currently stocked at more than 130 Costco locations along the East Coast, the coveted treat has yet to roll out nationally. Fans in other regions have taken to tagging Costco in hopes of expanding access to the returning favorite.
The rapid success of the Nightingale brand—and its meteoric rise thanks to Costco’s platform—highlights a broader trend within the frozen dessert market: the surge in premium ice cream offerings and the potential for high-demand ice cream franchise opportunities. As consumer appetite grows for artisanal flavors and nostalgic formats like sandwiches, brands that can scale through wholesale partners or franchising stand to capitalize.
For now, those outside the Northeast will have to wait—or consider a road trip. Given its sell-out history, Nightingale’s Strawberry Shortcake Ice Cream Sandwich may not be around for long.
