Two decades ago, Saul Soto’s uncle, Cris Romero, opened a Mexican candy store before acquiring an ice cream shop five years later. After learning the craft from the previous owner, Romero launched La Flor Michoacana, which has since expanded to several locations in Chicago’s West Town neighborhood, Melrose Park, Villa Park, and soon, Oak Park.
Now, Soto is preparing to open a new location at 9211 Broadway Ave. near Eight Corners, marking his first time running a shop. Unlike other leased locations in the family’s portfolio, Soto convinced his uncle to purchase this property outright.
“I really liked Eight Corners for its activity and Brookfield’s strong community vibe,” Soto said.
He is working with First National Bank of Brookfield to finance the project and collaborating with local officials to ensure the store meets all codes before construction begins. Romero has been mentoring Soto throughout the process.
Entrepreneurship runs in the family, with Soto’s parents also having owned small businesses such as a cell phone and shoe store. Soto expressed excitement about the opportunity and hopes to bring his uncle’s experience to the Brookfield community.
Growing up in the area and attending Morton West High School in Berwyn, Soto sees potential for his business, especially since the area currently has only one similar shop — La Michoacana de Brookfield — which does not offer the additional treats his store will feature.
In addition to traditional Mexican candies, the new La Flor Michoacana will offer unique extras like sweet corn elotes, fried chicharrónes (pork rinds), and yogurt dishes.
Soto is enthusiastic about the chosen location’s proximity to businesses, community spaces, and S.E. Gross Middle School, noting ample public parking and a business model catering to quick visits. Limited seating will be available for customers.
He is currently coordinating with architects and contractors to secure the necessary permits, targeting an opening date of August 1, with a fallback of September 1 if needed.
“We’re excited to open in Brookfield and hope to make a positive impact with our ice cream,” Soto said. “We look forward to becoming part of the community and serving everyone soon.”
